The rattan basket is designed to support the shape of your dough during its final rise. Because it is made of natural rattan, it absorbs excess moisture from the surface of the dough, which helps create a crispier, more artisan-style crust once baked.

The basket is not dishwasher safe and should be cleaned by hand. Simply brush out any excess flour after each use and let it air dry completely before storing; if dough sticks, let it dry and then brush it off. The linen cover can be hand-washed in cool water and air-dried.

Each scraper serves a specific function. The metal scraper is rigid and ideal for cutting dough portions or cleaning dried residue off your work surface, while the flexible plastic scraper is better for scraping down the sides of mixing bowls and handling sticky, high-hydration doughs without tearing them.

The scoring lame features a beechwood handle for a comfortable grip, but the blade is extremely sharp. It comes with five replacement blades, so always handle with care when changing them and ensure the blade is protected or stored safely away from children when not in use.

The 9-inch diameter is standard for a boule, or round loaf, typically made with 500 to 800 grams of flour. It is perfectly sized for most standard sourdough recipes that yield a single, substantial artisan loaf.
