Avoid the dishwasher, as it will strip the seasoning and cause rust. Instead, wash it by hand with hot water and a stiff brush, dry it thoroughly on the stove over low heat, and apply a thin layer of oil before storing.

The flanged lid is designed to hold hot coals on top, which creates even, oven-like heat for baking or roasting. Additionally, you can flip it over to use as a flat-top griddle for cooking eggs or pancakes.
